This laboratory's very pluridisciplinary team structures its research activities, studies and consultancy performance around:
- knowledge and quality enhancement of agricultural raw materials and food products (bread, wine, cereals...)
- possible uses of molecular genetics
- effects of foods on health

This laboratory is a mixed research unit with the Neuro-gastroentereology unit INRA (National Agronomical Research Institute).
